Pheasant ” My way”

Ingredients
Serves 4
4 tbs olive oil
100 g diced shallots
200 g carrots peeled and cut into small cubes
100 g celery cut into cubes
100 g courgettes
2 large potatoes peeled and cut into small pieces
2 tbs tomato paste
thyme
2 tbs soy sauce
1 tbs HB sauce
1.5 litres chicken stock
½ tsp dried chilli flakes
5 garlic cloves, sliced
1 prepared pheasant cut into portions
1 tsp salt

Method
Heat the olive oil in a large pan. Sautè the onions,
garlic, chilli, and the vegetables with the
pheasant.
Add tomato paste, soy sauce, HB sauce, salt and
thyme.
Stir all ingredients well and add the chicken stock.
Bring to the boil, reduce the heat and simmer gently
for 20 minutes.
Serve the pheasant portions hot accompanied with the
sauce, vegetables of your choice or with green
salad.
