Papa’s MusselsFor 2 portions you will need: 1 kg fresh mussels 1 large onion peeled and diced 1 cloves garlic crashed 1 large carrot, peeled and diced 100 g diced celery 100 g butter 2 cups dry white wine 2 cups water ½ cup chopped parsley 1 bay leaf ½ tsp cayenne pepper 2 lemons salt Wash mussels well and discard the opened ones. In a large pot, combine water, wine and all other ingredients except the mussels, chopped parsley and the lemon juice. Bring to the boil and add the mussels. Cover the pot. Shake the pot a few times while cooking the mussels which will take about 10 minutes. Remove pot from the heat. Add the juice of one lemon and the parsley. Mix well. Remove the mussels which did not open during the cooking process and throw them away. Transfer the mussels to a deep serving dish, garnish with slices of lemon and enjoy immediately with fresh baguette. Easy, isn’t it!
