Makarona
This basic and simple to prepare, but also a nutritious
pasta dish, is a “must-have-dish”
at least once a week in
Libya. You can make it with meat, chicken or with vegetables.
For 4 portions you will need:
500 g lean meat of your choice
500 g pasta
1 large onion cut into thin slices
3 tbsp olive oil
3 tbsp tomato paste
½ tbsp cayenne pepper
½ tbsp curry powder
salt
Cut the meat into large pieces.
Heat the olive oil in a casserole and fry the sliced
onion until very soft.
Add meat pieces and mix well with the fried onion.
Add tomato paste, cayenne pepper, curry powder and salt,
mix all well and cook gently over medium heat for about
3 minutes.
Add 1 l water and let the meat cook over the medium heat
for about half an hour.
Add the pasta to the meat and tomato sauce and cook for
about 7 minutes or until pasta is ready but not over cooked.
Add some water if necessary and adjust the seasoning
accordingly.
You can serve pasta garnished
with flakes of parmesan cheese and accompanied with fresh
bread |
