Lime & Cheese cake…where lime, lemon and orange met!

Alturbi 8 – 10 portions Base: 150 g biscuits 75 g soft butter 25 g sugar For the stuffing, you’ll need: 300 g cottage cheese 100 g sugar 3 Eggs (yolks and whites separated) 2 dl natural yoghurt 3 limes juice and zest 10 sheets of gelatine 2 dl double cream (whipped) Crush the biscuits and mix sugar and butter. Spread the mixture and press firmly in a pie tin (22-24 cm) and refrigerate. Wash well the limes, grind zest and squeeze the juice out. Combine cheese, sugar, egg yolks, yoghurt, lime juice and grind zest. Mix well. Soften gelatine in cold water, squeeze excess water out and melt them in 4 spoons of hot water. Cool the gelatine liquid a little pit and add to cheese mixture. Add whipped cream. Whip the egg whites and add to mixture mixing all ingredients thoroughly. Transfer to pie tin on top of biscuit and butter base. Cover and refrigerate for 5-6 hours. I serve this delicious cheese cake with fresh berries, lemon sauce and decorated with orange syrup and mint leaves.
