Lamb Chops with fresh herb oil

Serves 4

12 good and neatly cleaned lamb chops

Vegetables of your choice

Potato cake

Fresh mint leaves for garnish

Herb Oil:

For the herb oil you will need a few leaves of basil, one tbsp chopped parsley,

one tbsp dill, 3 tbsp olive oil, salt, black pepper, 1 tbsp vinegar and 1 tsp ground garlic.

Combine all ingredients in food processor and blend for a few seconds.

Marinade:

4 tbsp olive oil

1 tbsp finely chopped fresh coriander

1 tbsp finely chopped wild oregano

1 tbsp finely chopped fresh mint

Juice of 2 lemons

1 tbsp black pepper

1 tbsp salt

Combine all marinade ingredients in food processor and blend.

Pour marinade over chops and spread it evenly to coat the chops well with it.

Leave the lamb chops in marinade in room temperature for 30 minutes.

Grill the lamb chops according to your preference.

Cook potato cakes ( made of mashed potatoes, diced onions, eggs, parsley, salt and pepper) and the

vegetables of your choice.

When serving, arrange the potato cake and the vegetables in the middle of the plate.

Add the grilled lamb chops and some of the herb oil.

Garnish with fresh mint leaves.

For a lighter version, substitute the potato cake with green salad.
