kufta These spicy burgers are made of minced meat ( beef & lamb) spices and fresh chopped herbs. The burgers-like stakes are served hot accompanied with fried potatoes, salad and tomato sauce, tahini or yoghurt and mint sauce. Kufta can also be served in pita-bread as a sandwich topped with thin slices of tomato, chopped parsley, cucumber and onion rings. You can also make meat balls out this mixture...just for change. Makes 10-12 kuftas 500 g minced beef 500 g minced lamb 1 large onion finely diced 3 tbsp bread crumbs 1 tbsp baking powder 2 tbsp cinnamon 3 tbsp kammoon, cumin, jeera 4 cloves crushed garlic 1 tbsp paprika powder 1 dl chopped barsley 1 dl chopped dill 1 dl chopped mint 1 tsp cayenne pepper 1 tsp black pepper salt Flour to coat the kufta stakes and vegetable oil for frying. Combine all ingredients in a mixer or in a large bowl and mix well. Refrigerate for one hour. Oil your hands and take about 100 g of the mixture and make a meat ball. Keep the meat ball in one hand and use the other to flatten the meat ball to the shape of burgers stake. Turn the kufta burger in flour several times and fry in hot oil. Remove the ready Kufta from oil and place on plate covered with paper napkins to suck the excess oil. In case you want to reduce the amount of oil used in this recipe, you can cook kufta stakes in the oven. I prefer them grilled and served with coarse sharmula (Libyan salad)!
