Garbanzo &
Chicken Curry
Serves 4
1 kg chicken legs and wings
3 tbsp olive oil
200 g sliced onions
2 cloves garlic diced
150 g chick beans soaked in
water over night
5 tbsp tomato paste
3 tsp curry powder
1 tbsp grated ginger
1 tsp black pepper
2 bay leaves
Fresh wild oregano (dried would
do but…)

Sauté the chicken, garlic and
onions in hot olive oil.
Reduce heat.
Add all other ingredients except
the wild oregano.
Mix the chicken pieces, onions,
chick beans, tomato paste and spices well.
Add enough water to cover all
ingredients in the pan.
Cook over low heat for half an
hour.
Add the wild oregano according
to preference.
Serve with bread and / or
rice. |
