Basbusa
For the batter :
2 small tins or 300 g plain yoghurt
4 dl semolina
200 g melted butter
2 dl sugar
And for the syrup :
3 dl water
4 tbsp honey
1 dl sugar
1 tsp rose water
juice of one lemon
a few halved almonds for garnishing
Combine all ingredients for the syrup in a sauce pan and
let boil on medium heat for 10 minutes
or till sugar is completely dissolved. Keep the syrup
warm.
Mix the melted butter with the sugar.
Add yoghurt and the semolina and combine the batter
ingredients thoroughly.
Grease a baking pan and spread the batter evenly in it.
Garnish Basbusa with the halved almonds and Bake in a
preheated oven (180c) for about 20 minutes or
till it gets a lovely golden color.
Take Basbusa out of the oven and at once pour the syrup
on top of it. Set aside for at least 30 minutes and let it
absorb the syrup.
It is very important that both the syrup and the Basbusa
are hot when combining them.
Cut and serve with whipped cream
or with a ball of vanilla ice cream.
