Okra and Chicken Curry

  • Serves 4
  • 1 kg chicken
  • 3 tbsp olive oil 
  • 400 g okra (ladies fingers, pamia)
  • 200 g sliced onions
  • 2 cloves garlic diced
  • 5 tbsp tomato paste
  • 1 00 g crushed tomatoes
  • 3 tsp curry powder
  • 1 tsp white pepper powder
  • ½ large spoon allspice powder
  • 1 tbsp grated ginger
  • 1 tsp black pepper
  • 2 bay leaves
  • salt

Sauté the chicken, garlic and onions in hot olive oil.

Reduce heat.

Add all other ingredients.

Mix the chicken pieces, onions, okra, tomato paste and spices well.

Add enough water to cover all ingredients in the pan.

Cook over low heat for half an hour.

Serve with bread and / or rice.
